But before I dive into sharing some keto diet recipes with you, I want to first establish what an Instant Pot is for those who don’t know. Maybe by the end, you’ll want to grab one for yourself so you can use an Instant Pot to make keto recipes and your life all the more easier.

What Is An Instant Pot 

Okay, first things first. In case you didn’t know, an Instant Pot is a multi-functional kitchen appliance that allows you to pressure cook, slow cook, sauté, and a whole lot more. 

Some of you may already have a slow cooker, which primarily only allows you to cook food at a low temperature over a long period of time for those who like to “set it and forget it” while they work full time or balance challenge schedules but still desire a home cooked meal. 

An Instant Pot on the other hand is more versatile and has a pressure cook setting that makes this device significantly more attractive, especially if you want to cook meals quickly in significantly less cooking time (often 30 minutes or less) with pressure cooking capabilities.

How To Use Instant Pot To Make Keto Meals

OK, now that you know what an Instant Pot is, the next thing we have to do is learn how to take advantage of its features to make keto-friendly meals. Before we get started, here are some steps to take:

Look up low carb instant pot recipes 

Since the majority of keto friendly meals are also low-carb meals, before we can do anything, we need to know what we’re making. to get your wheels, spinning, think of meals like buffalo chicken, lettuce wrap ideas, or even meals that pair well with cauliflower rice to name a few. This blog is taking care of that first step for you, but for future reference, this is the first step you need to do.

Make a grocery list 

After we looked up the low-carb Insta pot recipes that we want to try, well then need to make a list of the ingredients so we can go grocery shopping. Instant Pot Beef & Broccoli

Instant Pot Beef & Broccoli
Ingredients

3 oz Beef, chuck roast (stew meat), raw – 182 calories

2 cups Broccoli – 48 calories

1 Tbsp Garlic, minced (Tbsp) – 0 calories

1 cup Broth, chicken or beef (cups) – 35 calories

2 Tbsp Soy sauce (Tbsp) – 20 calories

1 cup Water – 0 calories

Instructions
  1. **This recipe should be doubled to make 2 servings at a time (share or eat the other serving at a later time); the Instant Pot needs to have at least 1 ½ cups of liquid in it in order to work
  2. Put Instant Pot on “Saute” function; Spray inside pot with an oil spray
  3. Add in garlic; Saute beef pieces, stirring frequently 
  4. Add in broth, soy sauce, and water
  5. Press “Cancel” to stop Saute function, and then press “Manual” and adjust the time to cook for 15 minutes 
  6. After the Instant Pot beeps that it’s done, release the pressure knob and open the pot 
  7. Add in broccoli, stir, and then close the lid & let sit for 5 minutes 
  8. There will be extra liquid – you can discard it!

Instant Pot Cabbage and Sausage

3 Uncured bacon, slice – 132 calories

1 Sausage, chicken – 140 calories

1 Tbsp Soy sauce (Tbsp) – 10 calories

½ cup Broth, chicken or beef (cups) – 18 calories

Instructions
  1. **This recipe should be doubled to make 2 servings at a time (share or eat the other serving at a later time); the Instant Pot needs to have at least 1 ½ cups of liquid in it in order to work
  2. Boil sausages on the stove top – when they rise they are likely done; cut into slices
  3. Cook the bacon on the stove top; then cut into small pieces
  4. Add into the Instant Pot water, soy sauce, broth, and cabbage (chopped into small chunks)
  5. Press “Cancel” to stop Saute function, and then press “Manual” and adjust the time to cook for 3 minutes
  6. After the Instant Pot beeps that it’s done, release the pressure knob and open the pot
  7. Add in bacon and sausage, stir, and then close the lid & let sit for 3 minutes 
  8. There will be extra liquid – you can discard it!

Instant Pot Chicken And Mushroom Soup

Directions
  1. **This recipe should be doubled to make 2 servings at a time (share or eat the other serving at a later time); the Instant Pot needs to have at least 1 ½ cups of liquid in it in order to work

  3. Spray inside pot with an oil spray; Add in garlic 
  4. Cut chicken breasts in small pieces
  5. Add chicken, broth and mushrooms into the pot
  6. Press “Cancel” to stop Saute function, and then press “Manual” and adjust the time to cook for 5 minutes 
  7. After the Instant Pot beeps that it’s done, let sit for 10 minutes
  8. Then manually release the pressure knob & open the pot
  9. If making multiple servings, recommend only make for 2-3 days ahead of time to preserve freshness

Mississippi Pot Roast

Ingredients

6 oz Beef, chuck roast (stew meat), raw – 364 calories

½ Onion, yellow, large – 28 calories

2 tsp Ranch Seasoning – 16 calories

1 Tbsp Gravy mix (seasoning) – 20 calories

6 Peperoncini, jarred – 20 calories

Instructions
  • Chop onion into medium-sized chunks
  • Add roast, onion, seasonings, and drained peperoncini to your slow cooker
  • Cook on low for 6-8 hours
  • Enjoy!
  • No meat? Use chicken, or swap this meal out for another

Instant Pot Creamy Chicken with Spinach and Sun-Dried Tomatoes

This is one of my favorite, easy keto instant pot chicken dishes.

Ingredients

6 oz Chicken breast, boneless, skinless, raw – 190 calories

1 Tbsp Tomatoes, sun-dried, oil packed – 17 calories

3 cups Leafy greens, spinach, raw – 21 calories

1 Tbsp Garlic, minced (Tbsp) – 0 calories

½ cup Broth, chicken or beef (cups) – 18 calories

¼ cup Heavy Cream (cups) – 200 calories

Instructions
  1. **This recipe should be doubled to make 2 servings at a time (share or eat the other serving at a later time); the Instant Pot needs to have at least 1 ½ cups of liquid in it in order to work
  2. Put Instant Pot on “Saute” function; Spray inside pot with an oil spray
  3. Add in garlic; Sear, chicken breasts (just let cook for 2 minutes on each side)
  4. Add in spinach, tomatoes, broth, heavy cream
  5. Press “Cancel” to stop Saute function, and then press “Manual” and adjust the time to cook for 4 minutes 
  6. After the Instant Pot beeps that it’s done, release the pressure knob and open the pot 
  7. There will be extra liquid – discard it
  8. Since you’re removing extra cream (and therefore calories), you can top your meal with grated parmesan cheese if you like (~¼ cup) – please note this this not in the ingredients list so that the calories are accurate

Slow Cooker Enchilada Bake

Ingredients

6 oz Chicken thigh, boneless, skinless, raw – 190 calories

½ cup Corn, canned – 63 calories

¼ cup Beans & legumes, black beans, cooked – 57 calories

¼ cup Enchilada sauce – 24 calories

⅛ cup Salsa – 8 calories

1 Tbsp Green Chiles, canned – 5 calories

2 Tbsp Cheese, shredded, cheddar (Tbsp) – 60 calories

1 tsp Taco seasoning – 5 calories

Instructions
  1. Note: this recipe works best when making multiple servings at once
  2. Add chicken, enchilada sauce, salsa, green chiles, and taco seasoning to your slow cooker
  3. Cook on low heat for 6 hours or high heat for 2-3 hours
  4. Shred chicken with a fork, then add in corn, beans, and top with cheese
  5. Heat in the slow cooker for another 30 minutes
  6. No chicken? Use beans and cook for 1.5-2 hours total, or heat the contents on the stovetop. No dairy? Top with diced avocado.
  7. Note: I ate this dish on top of stir fried cauliflower rice, so you can do so too, or regular rice if you prefer!

Slow Cooker Lamb Stew

Ingredients

5 oz Lamb shoulder, raw – 398 calories

1 cup Celery stalks, chopped in half – 16 calories

2 Carrots, whole, large – 50 calories

1 Onion, yellow, large – 55 calories

1 tsp Avocado oil (tsp) – 41 calories

¼ tsp Garlic salt – 0 calories

1 tsp Thyme, dried – 0 calories

Instructions
  • Note: This recipe works best when making multiple servings at once
  • Slice carrots, onion, and celery into medium chunks
  • Add oil to your slow cooker (instant pot, crock pot), then your vegetables, then your meat (you can place the meat in whole, or sliced into large chunks), then your seasonings
  • Cook on low heat for 8 hours, or high for 4 hours
  • Slice or shred your lamb into strips, and mix back into the stew
  • Add more seasoning to taste if you like
  • No meat? Swap this meal out for another.

Instant Pot Salsa Chicken

Instructions

  • Take chicken out, shred chicken with forks, then put pack in the pot with salsa 
  • Top with shredded cheese & serve
